Fine Northern Oak has pursued chemical analysis of oak alternatives in service of research and the best product possible. Its efficient designs followed years of studying grain orientation’s effect on extraction of oak flavor compounds.

FNO found cross-cut grain exposure speeds extraction rate and impacts total extractable amount of molecules with limited water solubility and larger sizes.

Fine Northern Oak toasts its staves in small convection ovens, where air flow is adjusted to maintain temperature for each piece of oak. Following several hours of long, slow toasting, the oven doors remain closed for hours, and the staves naturally cool. This process helps create high levels of vanillin and furfural, leading to a smooth, creamy mouthfeel.
